It works based on " Bernoulli principle" . Which states that as velocity increases pressure decreases.
just observe the above image . As you force air through nozzle , the upper portion of paint bottle becomes low pressured region when compared with pressure in bottle. So in order to compensate this inbalance this is replaced by fluid in paint bottle as shown in figure.
